Ingredients
50 gr Fregola; 1 spring onion; 1 zucchini; 1 carrot; 1 eggplant; 1 potato; basil; pepper; salt

Guidelines
Clean the vegetables, peel the carrot and potato, then cut everything into cubes of the same size. Brown the spring onion in a pan with oil and then add the vegetables. Season with salt and pepper and cook for 10 minutes. Cook the fregola in salted water for just five minutes. After draining it, transfer it to the pan and stir. Cook for an extra 3-4 minutes. At the end of cooking, add fresh basil. Fregola is now ready to be served
