Gazpacho with SaclÀ Cucumbers

Ingredients

  • 120 G Cucumbers Acetelli Saclà
  • 1 kg hard-boiled and ripe coppery tomatoes
  • 100 g red bell pepper
  • 2 shallots
  • 8 large basil leaves
  • 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Chili powder to taste
  • Salt to taste
  • Pepper to taste

Guidelines

  • Wash, peel, cut the tomatoes in half, remove the seeds and cut them into small pieces.
  • Wash, peel the pepper and cut it into small pieces. Drain the Cucumbers Acetelli Saclà and cut them into slices.
  • Clean and chop the shallot, add the tomatoes, pepper and half of the cucumbers cut into rounds.
  • With the help of an immersion blender you get a sauce.
  • Squeeze the lemon and strain it through a strainer.
  • In a bowl, emulsify the extra virgin olive oil with the lemon juice, a pinch of salt, pepper and chilli.
  • Add the emulsion to the sauce, stirring carefully and keep it in the refrigerator until ready to serve.
  • Serve in a small bowl and garnish the dish with the remaining part of Cucumbers Acetelli Saclà in slices and basil leaves.
